    Been messing around with my mom's chicken casserole recipe. Makes for a damn good dinner.

    - One 2 pound family pack of chicken tenderloins
    - One 10.5 ounce can of Campbell's Cream of Chicken Soup
    - One box of Stove Top Chicken flavored stuffing
    - 1 3/4 cups of chicken broth (or stock)

    Layer the bottom of a glass cooking pan with the chicken tenders, brush the cream of chicken soup on top of the tenders, pour the stuffing into a medium sized bowl & add the chicken broth, mix thoroughly & let sit for a few minutes while the stuffing absorbs the broth. Once absorbed, add the stuffing on top of everything. Cook at 350 degrees for 40 minutes.

    AVB, thanks for sharing! I'm gonna have my babe give that a try since we got some boneless chicken breasts. I think we have cream of chicken soup but may have to pick up some Stove-Top. We also have Rice-A-Roni, so it should make for an awesome combo!

    Let me know how it goes. It's a very filling and tasty dish.

    Regarding rice, I usually go for the Near East rice pilaf - either the chicken or original flavor. The chicken one compliments any chicken-centric dish superbly.

    Another one of mom's old standbys I've been trying my hand at - fried tenders.

    - Family pack of chicken tenders if you're serving for two (or if you're just a fat fuck like me)
    - 1/4 can Pastene Italian bread crumbs (Progresso or 4C are acceptable substitutes as long as they're the Italian one, the plain one is too bland)
    - 3 eggs
    - Canola oil

    Get yourself a small bowl, whisk 3 eggs, pour eggs into a ziploc bag.
    Toss tenders into bag, shake like you're in an earthquake.

    Pour 1/4 can bread crumbs into another ziploc bag.
    Toss tenders into bag, shake like you're in an aftershock.
    Tenders should be well coated in bread crumbs.

    Get your favorite frying pan, coat the pan in Canola oil
    Put on high heat for 2 minutes to let oil get hot

    Fry tenders for 3 minutes on the first side & 2.5 minutes on the second side.
    Let cool for 5 minutes.
    EAT.

    Made tostadas last night. Amazing.

    Just heat Old El Paso shells in the oven to make crisp, Rosaritas refried beans, shredded lettuce (from a bag - already shredded, makes a difference), onions and the key - Taco Bell sauce. Put the beans on, shredded cheese and microwave to melt the cheese for a few and add the rest. God, they were awesome! Not to heavy a meal either.
    Sammy did the impossible. He made Van Halen better. Deal with it.

    Welch's Concord grape JAM (far easier to spread than traditional jelly)

    That's interesting. I used to be a regular soda fiend (Dr. Pepper, mainly), but I had to give that up 2 years ago. Anything with high fructose corn syrup in it makes me shit like a firehose. But I don't recall ever enjoying a soda with a PB&J. I might try it tonight with a Diet Dr. Pepper.
