    I had that grease fire once with a freaking briscuit, basically ruined it with a weird flavor. I just chopped it up for sandwiches, enough bbq sauce and pickles and onions covered up the taste.ha
    Then I did a beer can chicken once, free range bird, brined it, all that. Smoked it for a couple hours took the lid off went inside to get a platter, come back and it's gone, my damn lab was chowing down in the yard with it. Ordered dominos

    I came home from band practice back in the high school days, with a bit of a beer 'glow' and it was about midnight. Nuked a fair chunk of lasagna and took it to my room. Left for literally a minute to have a piss, and came back to see my Golden Lab chowing down on it... Trying to be quiet as to not wake my parents, yet laughing so hard! Dog has a look like "Score! Much tastier than the Iams dried kibble. Best day ever!" Haha.

    Shit I hear yall. At this house I have two smokers n shit. One I never ever use but to smoke my briskets or steaks etc. Had folks in and fired that bitch up for some steaks. Quick direct burn. Forgot! Fuck! Best FIRE EVER! Pops was like...dude aint gonna get in your bidness, but your fucking shit is rolling fire like right god damn now! Good times n shit. Out.

    I picked up a pork belly earlier for the weekend. I will cut into 3/4” chunks and roll in a rub. Throw them on a disposable mess screen for about 1.5 hours at 250. I plan on then putting them in a sealed foil pan with some butter and jalapeño jelly for another hour or so.

    Today...Two ribeye steak extra thick with pecan wood, just a touch. And mesquite. New first time rub on steaks for me at least. called "the executioner" Sweet heat so it says. Christmas gift from a buddy of mine who does competion cooks n shit. He's a firefighter, so he can only take so many 12 hour naps n shit. LOL. Out.

    I have finally perfected my chuck roast recipe. Made two four pound chuck roasts yesterday, and they were fucking excellent!

    Not a barbecue, but I did make a pot roast yesterday for the first time, and it turned out pretty damn good.

    I don't have the fondest of memories of pot roast, we had it all the time as a kid. But, choices are slim at the butcher, unless you like lamb, which I don't.

    Fired up my smoker today for the first time in probably 8 or 9 years, I've about decided to go with my WSM, I'm not gonna get a pellet grill, I don't think I'll be happy with one. If I'm gonna do it, I want a lot of smoke.

    Anyway, today I just got some stuff out of the freezer and got after it. Have a pile of pecan wood, so I used that. Had some country style pork ribs in a big pack, smoked those and made pull pork sandwiches turned out really good. I also split a chuck roast and smoked it. Cut it into cubes when it hit about 200, put in a pan with a bottle of BBQ sauce with a cup of brown sugar, put it back for 40 min covered and 20 min uncovered, best burnt ends I've had in a loooooong time. Chuck roast makes good burnt ends.

    A buddy of mine makes chili with burnt ends. Also something that's known around here as Cowboy beans. Baked beans with burnt ends instead of brisket.
