    Sauce is for puzzles who can't smoke their meat right. Also, there's been more of a "progression" with dry rubbed meat so clearly it must be superior.
    The only genre I really know is Van Halen.

    The guy that lives across the street from me runs a BBQ joint in town called "The Old West BBQ." Does everything with mesquite. Smoked brisket is damn good.
    The only genre I really know is Van Halen.

    On my last trip to SoCal for a friend's wedding a couple years ago we traveled down to Huntington Beach the day after the reception to recover and hang at the beach and the hotel pool.

    I smelled something good coming from the pier area and saw the smoke so I went to investigate. Turns out the guy that ran the "pier shack" where you could buy food and rent roller skates and stuff had just bought a Myron Mixon smoker and was cooking meat to sell later. He told me that included with his purchase was a week trip to Georgia to learn from Myron himself tips and tricks to make good Q.

    Unfortunately I had to leave before he had anything done but I thought that would be cool to go learn from the master.
    The only genre I really know is Van Halen.

    ...now this IS a thread I can get behind.

    I'll post a few of my thoughts, recipes, and anecdotes a little later when I have some free time, however:

    1. I lived in Fort Worth for pretty much all of the 90's, so I was spoiled for a long time eating some of the best BBQ (and Mexican) there is. Period.
    Angelo's, Railhead, North Main, Cousin's...plus a half dozen hole-in-the-wall Mom and Pop places that would pop up from time to time.

    2. I'm pretty much a dry rub guy, especially for brisket and ribs. I'll mess around from time to time with sauces for pulled pork (obviously) and chicken, but even then I'll only offer it up on the side...simply because once sauced, you can't unsauce...

    3. I'm definitely not in the "It's hickory (or mesquite) or nothing" camp. I like to mix and match different woods with different meats.

    4. I'll NEVER win any sort of BBQ competition...I'm the kinda guy who like his ribs almost falling off the bone. However, the perfect brisket is that magical point where it's still pink in the middle, but just about falling apart at the edges.

    5. I'll throw just about anything in the smoker: Eggs (for deviled eggs), potatoes (potato salad), grilled fruits (peaches and watermelon are our favorites)...heck, I've even make homemade bacon when I have the time (easier to do than you might think, and it turns out SO MUCH BETTER than anything store bought. It's like food porn for your mouth.)

    6. A couple three buddies of mine and I have a semi-annual "friendly" competition every Memorial Day and Labor Day weekend called the "Rub Off" which has been going for about four years now. Each of us makes brisket, ribs, and chicken, and then one other plate, that isn't judged and can be just about anything. We'll end up with about 40-50 friends and family showing up throughout the day to eat and vote...and drink...and put themselves into a food coma by early evening.




    ...damn it, I wasn't planning on firing up the smoker until next weekend (Labor Day), but you guys have me getting hungry thinking about this stuff. Maybe I can carve out some time Saturday for a small batch of pulled pork, smoked brats, and some smoked chicken for chicken salad sandwiches for the weekend. I know the wife and boys won't mind...

    That's awesome. Not sure if having a Rub Off with your friends is the best name for it but that sounds like a fun day.
