Are these people usually young or new players?

    Project to me means "DIY".

Yes. I have cnc body suppliers
Sometimes I have necks custom made sometimes I use mint used necks
I do the staining and painting and all the electronics

Just put a logo on the headstock, and sell them as your logo name, and say "Made in the U.S.A."

Hmmm.....Well "Project guitar" as I've seen many ads that have that in the title are very often nothing more than a guitar that someone has attempted to do something cool with, fucked up ,and are trying to sell "as-is" after giving up. There's an ad in my local CL today for a "project" Charvel that someone tried to refinish, but it turned out horrible, so they are selling it in parts saying it needs to be refinished. It needs more than that now because they butchered it with a scraper.

I'd think "Custom" is good. "DIY" can have a poor association attached to it. Not that you didn't do it yourself, but that can make it sound like you're trying to sell a ready made "kit guitar" you slap together from budget parts which usually don't hold a lot of value. You do so much from the proper assembly with great parts, and your finishes look incredible. Dude...I've seen your work, and they are beautiful. If I had the bucks right now, I'd pull the trigger!!!!
Custom has a nicer ring to it that gets interest without making it sound cheap. At least it opens a like minded dialog about them in that they want to know what they consist of and keeps you in the captains seat as far as what you feel the guitar is worth to you to part with. There's always give and take, but there's nothing worse that being ground down on your bottom line unnecessarily.
