I've always mic'd my cabs toward the edge of the cone at an angle, but with the 5150 III cab, I mic mine almost straight on center, too, set the high and low dials at 12 o'clock and put the mids at about 3 o'clock. That is an awesome amp.

I mentioned this in another thread as well. I was surprised how close it is to the center.
It typically gives a harsher more metalish tone, but then I don't have any experience with the EVH speakers. His tone sounds pretty good in the clips.
In past years his preferred placement was typical, at about 2" inches from the edge of the speaker.
Maybe something he's adopted from Hogarth/Shanks and getting the warmth more from EQ settings rather than relying on the mics placement so much.

Stupid question from a non-musician... why do you need to mic an amp that has so much sophistication in it's sound only to have it piped through a PA system? What am I missing?

Hope they are finally putting out the 50 watt head. I did notice a couple 2x12's showing up on ebay...no heads yet though.

The new bass could be the deal as well..as previously stated and I'm guessing that there will be a few more finishes for the Wolfgang's coming out.

Mic placement is extremely important because that is the sound that goes to the PA which the listener hears. Generally speaking if a mic is placed in the middle of he cone you will hear more highs, a less body sound which is why I was curious. I will say his tone sounds bad ass in the recording.

it has to do with stage volume. you dont want to have an amp on 11 during a performance typically just so the audience can hear you. Now, this small gig is somewhat different, and Ed could have gotten away with it, but it just sounds better to have all the instruments in the mix with the PA.

theres more to it but thats the gist of it

Exactly. Put it this way, if you stick the bass on one side and guitar on the other and don't feed them through the PA, if you're on Ed's side, you wouldn't hear the bass and if you're on Wolf's side, you wouldn't hear Ed. Placement of the mic is basically just finding the "sweet spot" on the speaker that gives you the cleanest tone and sound.
