    Default what can you cook...*well*

    i.e., to a very good degree.

    my spaghetti bolognaise is - according to my friends - "excellent". this is one of my very few achievements in life.

    I can't really cook/bake/grill anything else to what I would call a 'really good' level.

    BBQ chicken. I guarantee you it is better and more unique than any other conventional BBQ chicken recipe you have ever tried.

    Gumbo. I'll take all damn day to make a good gumbo. I've not tried seafood yet, but my Andouille, hamhock and chicken will put you in to backflips.

    Coming in to Fall, my forte is smoking beef jerky and salmon. Best you've ever had. Guaranteed.

    ....I think that's about it, outside of hamburgers and steaks of course.

    I have been told by more than a few people that I make the best soft tacos they have ever had (Chicken or Beef). I make them, I do not just put out the fixing's and let people make their own, which they are not sure about until they try one.

    Say it brother! As much as I enjoy a good bbq'd steak etc. nothing comes off the grill better than chicken. My specialty is cedar plank chicken. Cedar planks..not just for salmon! This chicken is so mouth watering good that even my ex-wife said, "Wow! This is like restaurant chicken!" And of course my reply was, "You mean better than restaurant chicken." Amazing stuff. Cooks in half the time because of the heat from the smoke and all that cedar ash nicely seasons the skin. (of course you have to use untreated cedar )

    Seen, what is your set-up for smoking? I have a friend that provides me with a magnificent smoked dolphin from time to time, and he refuses to allow the details to slip. Bear in mind, I am not asking the secrets to your process at all, as that would be intrusive as hell, not to mention presumptuous. I merely ask if the equipment involved is extensive.

    Got me a nice, friends and acquaintances-acclaimed chili recipe. None of this chili powder bullshit, you understand. Boiled chili pods blended and strained make up my basic stock, along with garden tomatoes. Still experimenting with the various blends of California and New Mexico pods, and when I hit on it, people are gonna collapse with sheer delight.

    My first run at moussaka had only one thing wrong with it, but it was a duesie: the eggplant just wasn't right. But I've talked with some experts and figured out where it all went wrong. Won't make that mistake again, and the next time I have a whole day to work on it, watch out...

    On the grill: Swordfish, Salmon, steaks burgers chicken, Ribs and chops.
    In the oven: Cod, sole, chops, chicken you can pretty much name it. I do the majority of the cooking in my house.

    I make a great tomato/pepper salsa that goes great with steak.

    Well, My old man was best friends with the owner of a local Italian Resteraunt. So... I worked there since I was about 13 off & on up until a few years ago. I learned to make everything from Pizza & Cheese steaks to Saute. I've been told I make an awsome Lasagnia. I make it home-made, with home-made gravey, and layered( not with noodles ). Real lasagnia you use one rolled out thin sheet of dough (same kind you make home-made spagetti with), and It's really better that way! At least I think so! I can make alfreado sauce, Gravey, hoagies( Hero's in NYC ), Veal or Chicken parm, Penne ala Vodka.... ect... Oh... & the owners mother FINALLY showed me how to make her (locally) Famous meatballs. Im sure there's a lot more I just can't think of right now. Besides, all this is making me HUNGRY! LOL...

    I've never tackled "lasagnia", but i do have an authentic Northern Italian recipe passed down from generation to generation for "lasagna" that i prepare quite often. My favorite however is a 16 hour smoked beef brisket that i have been making for about 15 years now, it is always a crowd pleaser! The beef "biscuit" didn't go over too well though.
