    Default Your favorite quick and easy recipes......

    K I know that there was something like this awhile back where people posted their favorite foods or something, just couldn't find it! Anyway, with school starting back and going back to a rushed schedule it is nice to have some quick and easy recipes on hand! I know at our house we get tired of the same dishes all the time. So anyone have a favorite to share??????

    This is easier that it looks at first and it freezes beautifully! I make it on weekends and then put part back in the freezer for my hubby and I. For the 2 of us I can get three meals out of it.


    Lasagna, Northern Style
    Time: about 2 hours - Servings 12

    1/2 lb ground beef
    1/2 lb ground pork
    1 small onion, diced
    1 28-ounce can tomatoes (I used diced tomatoes)
    1 6 oz can tomato paste
    1/4 c water
    1 tsp basil
    1/4 tsp pepper
    salt
    1 16oz pkg mozzarella shredded (I buy and extra 16 oz pkg of moz to put on top of the las. the last 15 minutes of cooking. I like lots of cheese. )
    1 15-16 oz container ricotta (2 cups)
    2 eggs
    1 Tbsps chopped parsley
    2/3 16 pz pkg lasagna noodles (about 14 noodles)
    3 Tbsps butter or margarine
    3 Tbsps all purpose flour
    1/2 tsp ground nutmeg
    1 1/2 cups milk


    1. In 4-qt saucepan over high heat, cook ground beef, ground pork, and onion until all pan juices evaporate and meat is well browned, stirring frequently. Add tomatoes with their liquid, tomato paste, water, bail,pepper, and 1 1/4 tsps salt; heat to boiling. Reduce heat to low; cover and simmer 10 minutes, stirring occasionally. Skim off fat from sauce; keep warm.

    2. In medium bowl, mix 16 oz mozzarella cheese, ricotta cheese, eggs and parsely; set aside.

    3. Prepare lasagna noodles as label directs; drain.

    4. Meanwhile, in 2-quart saucepan over medium heat, melt butter or margarine; stir in flour, nutmeg and 1/4 tsp salt until blended; cook 1 minuite. Gradually stir in milk; cook, stiring constantly, until white sauce is thickened and smooth; remove from heat.

    5. Preheat oven to 375F. In 13" by 9" baking dish, evenly spoon about 3/4 cup meat sauce. Arrange half of noodles ocer sauce overlappng to fit. Spoon half of cheese mixture over noodles; spread with half of white sauce; top with half of remaining meat sauce. Repeat layering with remaining noodles, cheese mixture, and sauces.

    6. Bake lasagna 30 minutes

    7. Spread remaining 16oz of shredded mozzarella over top bake for another 15 minutes or until heated through. Or if you don't want the extra cheese on top just continue baking until heated through about another 15 minutes. Remove from oven; let stand 10 minutes for easier serving.

    King Ranch Casserole

    1 lb Boneless, skinless chicken
    -breast (cut into small
    -pieces)
    2 Cans cream of mushroom soup
    1 Can Rotel tomatoes
    2 c Shredded cheddar (velveeta is great too)
    1 Bag Plain Doritos

    In non-stick pan (no oil, etc.) stir-fry chicken
    pieces until done. Mix together soups and tomatoes in
    large bowl. Take 11x7 glass baking dish. Spray with
    Pam (or grease). Break up enough Doritos to cover
    bottom of dish. Layer on 1/2 of chicken, then 1/2 of
    cheese, then 1/2 of soup mixture. Layer same way
    again: chips, chicken, cheese, soup. If you have any
    Doritos and cheese left, sprinkle them over the top.
    Bake at 350 for 1 hour. I usually only cook it for 25-30min at 400

    On the side I served sour cream, tomatoes, lettuce,
    and salsa, and refried beans.

    Cooking tip for people who don't like mushrooms. Anytime a recipe calls for Cream of Mushroom soup you can subsitute Cream of Celery soup. It doesn't really do much to change the taste of the recipe, but it will add the thickness that the Cream of Mushroom would have added.

    I love mushrooms, but my son doesn't so I learned this early on in life.

    Ok another one that sounds like it might take awhile but it doesn't, but it is great! And if you like mushroom soup you will love this!


    Mushroom Bisque:

    Ingredients: 6 tbspn. butter, two medium celery stalks w/ leaves, one yellow onion, one package of fresh mushrooms (20-25), 1/2 tspn. salt, 1/2 tspn. pepper, 1 tspn. Worcestershire sauce, 1 stpn. sherry, one cup of milk, 1/2 cup of heavy cream.

    Instructions: In a 10" frying pan melt butter, add diced celery, sliced onion and sliced mushrooms. Saute' on high until all is wilted.
    Put 1/2 of this mixture and some of hot liquid in blender. Add rest of ingredients (except for cream) and blend on high for 20 seconds. With blender still on, add cream and run for a few more seconds. Pour into large saucepan. Repeat blender steps with rest of mixture and ingredients. Heat on med high for five minutes while stirring.

    Sunya...that's looks so good. I can't wait for a cold night to make this (of course, that could be another 5 months here in satan's kitchen ) because I love mushrooms. Thanks for sharing.

    Here's a good one I use a lot when I'm in a hurry at school:

    1. Open Microwave
    2. Place 2 hot dogs in microwave for 53 seconds
    3. Place each hot dog into a piece of bread, not a hot dog bun
    4. Put mustard on each hot dog

    Usually done cooking and eating in roughly 5 minutes. No clean up. Which is the reason that last year during school I was eating 8 to 10 hot dogs per week.

    My college diet:

    1. 6X12 sheet of tinfoil across toaster oven grill.
    2. tortilla chips of choice spread across evenly
    3. liberal dose of cheese of choice across top
    4. meat topping of choice (optional) dispersed at random
    5. heat at 400 for 4 minutes
    6. feast like a stallion
    7. after dinner herbs spread evenly
