    OK. It's that time of year.

    Football season (pro and college) are well under way. The leaves are turning colors, there's a definite nip & chill in the air and I've broken out the jackets (but am still wearing shorts) [img]graemlins/thumb.gif[/img]

    A nice big piping hot bowl of chili is perfect on a night like this. I found a real good veggie chili from the Food Network that's gonna have me wrapped up in it's most tantalizing arms for about the next 3 days but I thought I'd toss this one out for discussion.

    Especially guys like seenbad, Top Timmy and t5. I'd imagine you little girls especially would have some chili wisdom to bestow on all of us here so fire up the cookers and let's get it on ladies! [img]graemlins/thumb.gif[/img]

    Sure, strungout! No problem at all. Here is the recipe straight from the foodtv.com page. You can find it for the show "30 Minute Meals". I made it for the first time tonight and I thought I did a pretty good job...at least it's not coming back up the way it went down! [img]graemlins/thumb.gif[/img]

    That and the fact that I ended up w/jalopeno juice in my fingernails AND nose (ouch!) and sprayed a bunch of onions and peppers in my eyes while I was cutting them up. :clutz:

    Veg-Head Three-Bean Chili

    Recipe courtesy Rachael Ray

    This Tex-Mex great pleaser is another vegetarian happy medium to please meat eaters and meat-free-ers alike.
    2 tablespoons (2 turns around the pan) olive or vegetable oil
    1 medium yellow skinned onion, chopped
    1 large red pepper, seeded and chopped
    1 large green pepper, seeded and chopped
    1 large jalapeno pepper, seeded and chopped
    4 cloves garlic, crushed and chopped
    1 cup pale beer or vegetable stock/broth
    1 (32- ounce) can crushed tomatoes
    1 (14-ounce) can black beans
    1 (14-ounce) can dark red kidney beans
    1 tablespoon ground cumin
    2 tablespoons chili powder
    1 tablespoon cayenne hot pepper sauce, several drops
    1 teaspoon coarse salt
    1 cup spicy vegetarian refried beans

    Toppings:
    8 ounces (2 cups shredded) spicy monterey jack or smoked cheddar
    Chopped scallions, whites and greens
    Diced fresh seeded plum tomato
    Blue and red corn tortilla chips or black bean tortilla chips, for dipping

    Over moderate heat, add oil to a deep pot and combine onion, peppers, and garlic. Saute for 3 to 5 minutes to soften vegetables. Deglaze pan with beer or broth, add tomatoes, black beans, red kidney beans, and stirring to combine.

    Season chili with cumin, chili powder, hot sauce, and salt. Thicken chili by stirring in refried beans. Simmer over low heat about 5 to 10 minutes longer, then serve up bowls of chili and top with shredded cheese, scallions, and tomatoes. Place bowls on charger plates piled with assorted tortilla chips.

    The few times I make chili, I make it by the big pot-ful!!

    Sorry ladies, gotta have the beef!

    I'd say this is 3,4-alarm chili (out of 5)

    3 lbs ground beef (or 2 lbs ground beef, 1 lb shredded beef)
    3 lbs spicy red beans
    1 onion, chopped
    2 tomatoes, diced
    3 cans Tabasco's 7-spice chili (spicy, not the original)
    2 beers
    1 OUNCE Tabasco Habanero sauce (that's right)
    2-3 ounces Tabasco Chipotle sauce
    4 habanero peppers, thin sliced & unseeded (leave the seeds in!)
    4 serrano peppers, sliced & unseeded
    1 cup of the HOTTEST giardinera (sp?) sauce (optional, but I got some superhot giardinera, and it makes it even better!)

    Brown the beef, and drain the fat.
    Put everything else in, bring to a boil.
    Simmer for 60-90 minutes ('til onion is soft)

    Stir every 2-3 minutes, so the bottom don't get scorched

    Let it cool down some, so that the burn comes from the peppers, and not the temperature [img]graemlins/devil.gif[/img]

    Ohhh, it'll burn going out of ya, but going down in ya ain't so bad [img]graemlins/thumb.gif[/img]

    Believe it or not, it tastes BETTER the next day, and all the ingredients have had a chance to blend several hours.

    I just did the old "copy & paste" bit and voila!!

    Now, about the beef, I also thought about adding some meat to it, but thought I'd give the initial recipe the benefit of the doubt and let me tell you...
